Swedish rye 45% rye and 71% hydration
200g rye
245g bread
300g water
100g starter
1 1/2 t salt
1 1/2 T mollases
1 T fennel seeds
1 t anis seed
1 t caraway
zest of 1 orange
50g sugar
started 6:30am
lift and fold x3
into banneton and fridge 10:30am
out of fridge 7:45pm
into 470 oven at 8:25pm 20 min covered, 20 uncovered
