300 g bread flour (Grain Craft Power Flour)
300 g warm water
100 g starter
1 1/2 t koshure salt
left on counter 78% hydration
lift and fold x 3
2:30pm into round banneton
7:30pm into fridge
out of fridge 6:00am
into 495 oven 7:30am for 15 min then lowered to 470
15 mins uncovered
