130 g rye (winco dark)
250 g bread flour (Grain Craft Power Flour)
250 g warm water 89 degrees (30 sec in microwave)
150 g starter
1 t koshure salt
1 tsp caraway seeds
2 tsp onion flake
left on counter 72% hydration
lift and fold x 3
7:00pm into rectangle banneton
9:15pm into fridge
6:45am pre-heat to 500
