130 g rye (King Arthur medium)
250 g bread flour (Grain Craft Power Flour)
250 g warm water 89 degrees (30 sec in microwave)
150 g starter
1 t koshure salt
1 tsp caraway seeds
2 tsp onion flake
left on counter 72% hydration
5 mins in mixer (repaired!)
7:00pm into rectangle banneton
7:45pm into fridge
bake at 7:30am
